Flammekueche, also called Tarte Flambée

A bacon and onion tart from Alsace

Serves 6

Ingredients:

  • 1 refrigerated roll of Pillsbury Pizza Dough
  • 1/3 cup + 1 Tablespoon of crème fraîche
  • 2-1/2 Tablespoons large curd cottage cheese
  • 2-1/2 Tablespoons of sour cream
  • 1 onion, very, very thinly sliced
  • 6 oz. bacon, cut into 1/2-inch wide strips
  • salt and freshly ground black pepper

Preparation

  1. Preheat oven to 425°F.
  2. Roll the dough out to a 15x10" rectangle on a lightly floured baking sheet.
  3. In a food processor, purée the crème fraîche, cottage cheese and sour cream. Season with salt and pepper.
  4. Spread the cream mixture over the crust. Top with the onions and bacon, sprinkling them evenly over the cream mixture.
  5. Bake until the edges of the crust is crisp and brown - about 15 minutes.

To serve:

Remove from oven and grind some fresh pepper over the tart. Cut into pieces and serve accompanied by a green salad and a glass of Alsatian Gewürtztraminer or Riesling white wine.
