Sauté potatoes lyonnaise

To serve 2 persons

Ingredients and equipment

  • 2 lb Désirée potatoes
  • 4-5 tablespoons olive oil (no other cooking oil brings the same result)
  • 1 small onion finely chopped
  • Coarse rock and freshly milled black peppers
  • Use two frying pans for the second stage

Preparation

Stage one

  1. Have ready a warm serving dish lined with crumpled greaseproof paper
  2. Thinly peel the potatoes and cut them into even sized pieces, but not too small
  3. Put them in a saucepan and cover with boiling water add salt and bring to simmer for 15 minutes
  4. Now drain the potatoes and arrange them on a wooden board and slice them thinly and evenly

Stage two

  1. Take two medium frying pans and a small saucepan.
  2. Heat a tablespoon of olive oil in the saucepan and fry the chopped onion gently
  3. Now heat two tablespoons of olive oil in each frying pan and, when sizzling, add the potatoes taking care to divide and space them so that do not overlap in the frying pans
  4. Fry on a high heat for 5-7 minutes before turning. They must be crisp and brown all over
  5. Now using a slotted spoon transfer them to your prepared warm dish laying them with care on the crumpled greaseproof paper
  6. Scatter on the fried onion
  7. Loosen the top of the pepper mill to get a coarse grind and sprinkle over the potatoes.
  8. Crush some coarse rock salt between your fingers and thumb and sprinkle this also over the dish
  9. Finally pull out the paper from underneath which will have absorbed surplus oil and serve at once.

To serve

Serve immediately or the potatoes will go soggy rather quickly..
