A bacon and onion tart from Alsace
Serves 6
Ingredients:
- 1 refrigerated roll of Pillsbury Pizza Dough
- 1/3 cup + 1 Tablespoon of crème fraîche
- 2-1/2 Tablespoons large curd cottage cheese
- 2-1/2 Tablespoons of sour cream
- 1 onion, very, very thinly sliced
- 6 oz. bacon, cut into 1/2-inch wide strips
- salt and freshly ground black pepper
Preparation
- Preheat oven to 425°F.
- Roll the dough out to a 15x10" rectangle on a lightly floured baking sheet.
- In a food processor, purée the crème fraîche, cottage cheese and sour cream. Season with salt and pepper.
- Spread the cream mixture over the crust. Top with the onions and bacon, sprinkling them evenly over the cream mixture.
- Bake until the edges of the crust is crisp and brown - about 15 minutes.
To serve:
Remove from oven and grind some fresh pepper over the tart. Cut into pieces and serve accompanied by a green salad and a glass of Alsatian Gewürtztraminer or Riesling white wine.
